Does Capture support a true fullscreen mode? NVIDIA's SLI does not perform correctly in windowed mode, and only comes on in Full Screen Mode. I cannot figure out any way to force capture into a non-windowed mode. Even the "standalone" application is only a window; while I can maximize it I can never have it take over the whole screen and disable the title bar/start menu, etc.

No, Capture does not provide a true fullscreen mode. It is on our todo-list but at a rather low priority.
I'm not sure where you got the impression that SLI wouldn't work without fullscreen mode though - that is not true.

Lars,
If you turn on SLI indicators in the NVIDIA control panel, they do not illuminate when running capture. Both cards report 95-99% load in GPU-Z.
I did a similar test with the Furmark Burn in test. In windowed mode, the SLI indicators do not illuminate. Both cards are at 95-99% load. I get approximately 64 fps (720p).
Full screen mode with Frumark (All other settings the same): SLI indicators come on, both GPUs at 95-99% load, and I get approximately 120fps (nearly double the framerate!)

Also, after doing some further testing, if I disable SLI and run capture, I get approximately the same framerates as I do with SLI enabled... Except now one video card is sitting there not doing anything.
Capture reports ~5fps. I have roughly 3500 fixtures patched at the moment, spread across 80 universes.

Interesting, this was not what our tests indicated last time. We will
investigate what it would take to bring Capture into fullscreen mode!
(This was on Windows, right?)
