I think this is a great feature request and i'd like to offer my thoughts.
Perhaps this could be left as a manual option, within the same window as when you add custom text to the key. A "change colour" box here would be nice and simple.
At the same time, it would be nice to have the option to "clone" the symbol so that it could appear twice or more in the key as different colours if required.
Also, while we're at it, i'd love to have control over the order that symbols are set out in the key.
And, my big one, copy and paste of text boxes - I get very tired of configuring the size, colour and position of every single text box. It would also be lovely if the text box appeared in the position you "right click" or in future "paste" the item, rather than having to zoom out and fetch it from the top left every time.
Sorry to hijack the post with this....I got carried away. But the first suggested feature is a great one!!
